Lemon Garlic Chicken -Slow cooker
Jump to RecipeThis is such a great recipe for busy weeknights! You don’t even have to remember to thaw out your chicken!

I was able to score a ton of organic chicken thighs on clearance, so I have been loving finding new ways to cook them. After taking inventory of my pantry, I realized that I had garlic that needed to be used up and quite a few lemons. With no meat thawed out, this experiment began.
This turned out to be the perfect recipe for that night. We had a few other kitchen projects going on that day and some errands to run, so I knew I would not want to be slaving away in the kitchen come evening.

Getting home after a busy day knowing that I needed to have dinner on the table in about 30 minutes was no problem. Because the house was filled with the smell of the lemon and garlic and chicken. I quickly thew together my 30 minute dinner rolls and while they were baking tossed some asparagus in the cast iron. To finish everything off I topped the chicken and asparagus with parmesan and we all ate and were happy.
